200ml recently pressed lemon juice
500g fine sugar

200ml citrus syrup (as made above)
A few cranberries, as a garnish

Instructions
For the Syrup: Combine all the ingredients in a saucepan, heat until it reaches a light boil, stirring so the sugar melts. Next, remove from the burner allowing it to reach room temperature completely. Decant into a sealable bottle, seal keeping it in the fridge, where it will keep for around one month.
To make Premix: Mix all the liquid ingredients in a big jug, allow it to infuse for an hour, then pass it through best through cheesecloth, making it perfectly clear.
To serve: Pour 85ml from the premix to a stirring glass packed with ice, and stir carefully for one minute to cool it down. Strain into a cold coupe glass or equivalent, top with the cranberries adding the final touch by giving it a quick spritz with the mandarin essence over the drink.
